Triple chocolate mousse cake

A triple chocolate mousse cake is a decadent dessert that combines layers of different chocolate mousses for a rich and indulgent treat. Here’s a recipe to create this delightful cake:

For the cake layers:

7 ounces (200g) dark chocolate, chopped
1/2 cup (113g) unsalted butter
1 cup (200g) granulated sugar
4 large eggs, separated
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup (60g) all-purpose flour
For the chocolate mousses:

7 ounces (200g) dark chocolate, chopped
1 1/2 cups (360ml) heavy cream, divided
3 tablespoons powdered sugar
1 teaspoon vanilla extract
Instructions:

Cake Layers:
Preheat your oven to 350°F (175°C). Grease and line the bottom of an 8-inch round cake pan with parchment paper.
In a heatproof bowl set over a pan of simmering water (double boiler), melt the chopped dark chocolate and butter, stirring until smooth. Remove from heat and let it cool slightly.
In another bowl, whisk together the egg yolks, sugar, vanilla extract, and salt until well combined.
Gradually add the melted chocolate mixture to the egg yolk mixture, stirring constantly.
Gently fold in the flour until just combined.
In a separate clean bowl, beat the egg whites until stiff peaks form. Fold the beaten egg whites into the chocolate batter in three additions, being careful not to deflate the mixture.
Pour the batter into the prepared cake pan and bake for about 25-30 minutes or until a toothpick inserted into the center comes out clean.
Let the cake cool completely in the pan before removing it.
Chocolate Mousses:
For the dark chocolate mousse: Melt the chopped dark chocolate in a heatproof bowl set over a pan of simmering water. Let it cool slightly.
In a separate bowl, whip 1 cup of heavy cream with 2 tablespoons powdered sugar until stiff peaks form. Fold the whipped cream into the melted chocolate until smooth and well combined. Set aside.
For the milk chocolate mousse: Repeat the same process as above, using milk chocolate instead of dark chocolate.
Assembling the Cake:
Once the cake is completely cooled, carefully slice it horizontally into two or three even layers.
Place one layer of the cake on a serving plate or cake stand. Spread a layer of the dark chocolate mousse evenly over the cake layer.
Place another cake layer on top and spread a layer of the milk chocolate mousse over it. Repeat with additional cake layers and mousses if desired.
Refrigerate the assembled cake for at least 4 hours or overnight to allow the mousses to set.
Decoration (optional):
Before serving, you can decorate the top of the cake with whipped cream, chocolate shavings, berries, or any other desired toppings.
